Ingredients:

  • 1 (15 oz) can pumpkin puree
  • 1 (15.25 oz) box spice cake mix
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup of water

Instructions:

  1. Preheat oven to 350 degrees.
  2. Line a 12-cup muffin pan with paper liners or lightly grease with cooking spray.
  3. In a large bowl, stir together pumpkin puree, spice cake mix, and water until well combined.
  4. Fold in chocolate chips.
  5. Divide batter evenly among the prepared muffin cups, filling each about ¾ full.
  6. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from oven and let cool in the pan for 5 minutes before transferring to a wire rack.
  8. Serve warm, with butter or extra chocolate chips if desired.
