If you’re craving the perfect fall dessert, these Caramel Apple Cheesecake Bars will hit the spot! With a buttery crust, creamy cheesecake filling, cinnamon-spiced apples, and a drizzle of caramel on top, they’re basically autumn in bar form. Every bite is sweet, cozy, and full of those crisp apple pie vibes with a cheesecake twist. Perfect for sharing at gatherings, or keeping all to yourself with a fork straight from the pan!

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup firmly packed brown sugar
  • 1 cup (2 sticks) butter, softened
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup sugar, plus 2 tablespoons, divided
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 Granny Smith apples, peeled, cored, and finely chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup caramel topping

Instructions:

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, mix flour and brown sugar until combined. Cut in softened butter with a fork or pastry cutter until the mixture is crumbly.
  3. Press the crust mixture evenly into the bottom of a 9×13-inch baking dish. Bake for 15 minutes, then remove from oven.
  4. In a large bowl, beat cream cheese with 1/2 cup sugar until smooth. Add eggs and vanilla, mixing until well blended. Pour over the warm crust.
  5. In a small bowl, stir together chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg. Sprinkle evenly over the cheesecake layer.
  6. Bake for 30 minutes, or until the cheesecake is set.
  7. Remove from oven and drizzle with caramel topping. Allow bars to cool completely before cutting into squares.
  8. Serve chilled or at room temperature.
