With a buttery crust, creamy cheesecake filling, cinnamon-spiced apples, and a drizzle of caramel on top, they’re basically autumn in bar form. Every bite is sweet, cozy, and full of those crisp apple pie vibes with a cheesecake twist. Perfect for sharing at gatherings, or keeping all to yourself with a fork straight from the pan!

Ingredients:
- 2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 cup (2 sticks) butter, softened
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup sugar, plus 2 tablespoons, divided
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 Granny Smith apples, peeled, cored, and finely chopped
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup caramel topping
Instructions:
- Preheat oven to 350 degrees.
- In a medium bowl, mix flour and brown sugar until combined. Cut in softened butter with a fork or pastry cutter until the mixture is crumbly.
- Press the crust mixture evenly into the bottom of a 9×13-inch baking dish. Bake for 15 minutes, then remove from oven.
- In a large bowl, beat cream cheese with 1/2 cup sugar until smooth. Add eggs and vanilla, mixing until well blended. Pour over the warm crust.
- In a small bowl, stir together chopped apples, 2 tablespoons sugar, cinnamon, and nutmeg. Sprinkle evenly over the cheesecake layer.
- Bake for 30 minutes, or until the cheesecake is set.
- Remove from oven and drizzle with caramel topping. Allow bars to cool completely before cutting into squares.
- Serve chilled or at room temperature.
