Ingredients:
- 1 cup unbleached all-purpose flour (or whole wheat or gluten-free mix) — 5 oz by weight
- 2 teaspoons baking powder (make sure it’s fresh!)
- ¾ teaspoon kosher salt (use less if using table salt)
- 1 cup non-fat Greek yogurt (not regular yogurt — it’ll be too sticky; I like Stonyfield)
- 1 egg white or whole egg, beaten
- Cinnamon Sugar Mixture

Instructions:
Oven Method
- Preheat oven to 375°F. Line a baking sheet with parchment paper or a silpat. If using parchment, lightly spray with oil.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Add yogurt: Mix with a fork or spatula until a crumbly dough forms.
- Knead: Lightly dust a work surface with flour. Transfer dough and knead for about 15 turns until tacky (not sticky — it shouldn’t stick to your hands).
- Shape bites: Divide dough into 4 equal balls. Roll each into a ¾-inch rope and cut into 1 -2 inch pieces.
- Bake: Place on the top rack and bake for 15 minutes.
- Cool: Let cool for at least 15 minutes before slicingCool: Let cool and toss in melted butter and than toss in cinnamon sugar mixture.
Air Fryer Method
- Mix dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Add yogurt: Mix with a fork or spatula until a crumbly dough forms.
- Knead: Lightly flour a work surface. Knead about 20 turns until tacky (not sticky).
- Shape bites: Divide dough into 4 equal balls. Roll each into a ¾-inch rope and cut into 1 -2 inch pieces.
- Preheat air fryer to 350°F.
- Air fry: Place bagels in batches without overcrowding. Air fry for 12ish minutes, until golden (no need to flip).
- Cool: Let cool and toss in melted butter and than toss in cinnamon sugar mixture
Notes: Sweet Cinnamon-Sugar Variation (from Janie!):
After baking or air frying, cut the bagels into bite-sized pieces. Toss them in melted butter, then coat with a mixture of ¼ cup granulated sugar and 1 teaspoon ground cinnamon. Serve warm for a sweet, irresistible treat!
