As a mom, making meals ahead of time is one of the biggest gifts of all time. One thing I have been loving to make recently are freezer breakfast sandwiches. These are so easy to make, and this recipe makes about 12 servings which is so great for breakfast meals throughout the week. You can make these sandwiches with just eggs, meat, and cheese, or you can customize them with your favorite ingredients like changing the bread to a bagel or adding veggies! These freezer breakfast sandwiches will quickly become a favorite in your house giving you a convenient and easy start to your day! Original recipe from Lauren Allen.

Ingredients:

  • 12 eggs
  • 2 tablespoons of milk
  • 1 teaspoon of salt
  • 1/2 teaspoon of freshly ground black pepper
  • 12 slices cooked bacon, sausage patties, ham, or Canadian bacon
  • 12 English muffins
  • 12 slices of cheddar cheese, or your favorite cheese

Instructions:

  1. Preheat your oven to 325 degrees and generously grease a 9×13″ pan.
  2. Whisk together the eggs, milk, salt, and pepper.
  3. Pour the egg mixture into the greased pan and bake for 18-22 minutes, or just until the center is set. Don’t over-cook.
  4. Remove from the oven and allow the egg mixture to cool before cutting into 12 squares.
  5. Top each English muffin half with egg, cheese, meat, and the other muffin half.
  6. If you are eating the sandwich right away, heat the sandwiches at 350 degrees for about 5 minutes, or until the cheese melts.

To Freeze:

  1. Wrap each sandwich individually in tinfoil, wax paper, or parchment paper and place them in a freezer safe resealable bag. Freeze for up to 1 month.

To Reheat:

  1. For best results, thaw in the fridge overnight. Remove original wrapping and wrap the sandwich in a paper towel. Microwave for 40 seconds, and then flip over and microwave for another 10-30 seconds until warmed through.
  2. You can also reheat the sandwiches in the oven at 350 degrees for about 10-15 minutes, or in the toaster oven.

Notes:

  • Add veggies to your eggs before baking to add extra vitamins to your sandwich!
