Ingredients:
- 1 lb boneless chicken breasts, raw
- 8 oz shelf-stable gnocchi
- 1 Package Boursin cheese
- 1 medium zucchini, halved and chopped
- 1 pint baby tomatoes
- 3 tbsp olive oil
- 2 1/2 tsp salt
- 3/4 tsp pepper
- 1 package Italian seasoning
Instructions:
- Preheat the oven to 400 F and line a large baking sheet with parchment paper
- To the baking sheet, add the gnocchi, Boursin cheese, chicken breasts, chopped zucchini, and tomatoes. Drizzle with olive oil and season with salt, pepper, and Italian seasoning. Toss everything on the sheet pan until everything is coated.
- Add the sheet pan to the oven and bake for 24-48 minutes or until the chicken is cooked through to an internal temp of 165 F.
- Once everything is cooked, remove the sheet pan from the oven and top with fresh herbs. Divide into 4 portions and serve.
